1. Peel four oval potatoes and cut off the top layer. After that, remove them from the centre and soak them in some water. In the meantime, boil the oil in a kadhai over a medium flame. The potatoes should be scooped out and deep-fried in hot oil until they turn a golden yellow colour.
2. To prepare the stuffing for potatoes, heat up a pan with some ghee added to it. Add the crushed cashew nuts, khoya, cottage cheese, green peas, cumin, red chilli powder and garam masala now. Mix well and cook for around 4–5 minutes.
3. Now, pack the deep-fried potatoes with this mixture. Halve them and place them in a hot tandoor for 10 minutes. Now coat them with ghee and roll them in toasted sesame seeds.
