1. Heat a pan with olive oil. Add the dry red chilli, cumin seeds, chopped garlic and asafoetida. Give them a minute to sputter. Add the cubed onions and cook for an extra two minutes.
2. Add the chopped capsicum and tomatoes now. After tossing them, sauté them for two more minutes.
3. Add the salt, garam masala, dried mango powder, coriander powder and red chilli powder now. Mix well. For two minutes, cook the masala.
4. The paneer cubes should now be added and well mixed to coat with masala. Mix in 2 to 3 tablespoons water to create steam, then swiftly toss in the ingredients. Cook for 5 minutes over medium heat, tossing in between.
5. Add some chopped spring onions as a garnish and serve.
