1. Heat two tablespoons of oil in a pan over medium heat. Chop the onions and ginger and put them in the pan. Saute for a few minutes until the onions are crisp and brown. Now, add the chopped tomatoes and cook until soft and tender. Remove from the flame and allow it to cool for a while.
2. Add the tomato-onion combo, water, curd and 1 tablespoon of soaked cashews to a blender. To create a smooth paste, carefully grind the ingredients. Heat some oil in a pan and add the cumin seeds. After a short time of frying the seeds, add the chopped capsicum to the blended cashew mixture.
3. For five minutes, constantly stir the gravy. Taste and add salt as needed, then whisk again. Serve it hot over cooked rice or chapattis, garnished with cashews and enjoy!
