Uttapam is a part of South Indian cuisine, usually served with sambhar and coconut chutney. It is normally prepared with rice flour and other vegetables; however, this recipe adds a twist by using gram flour to make the dish.

1. Soak the chana dal for four to five hours after washing. Don’t forget to add the fenugreek seeds while they’re soaking. After the dal has thoroughly soaked, move it to a grinder and grind to a smooth paste.
2. Add asafoetida, soda, turmeric, cumin, chilli powder, sugar and salt after that. Combine all ingredients well to make the uttapam batter. Now heat a pan over medium heat and cover it with a little amount of oil. Apply a thick layer of oil to the pan and use a bowl to spread the paste in a circular motion.
3. Apply a small amount of oil with a kitchen brush to the uttapam’s edges and cook over low heat for one minute. Now spread some coriander on top of the uttapam. After a few more seconds of cooking on both sides, serve with green chutney and enjoy!
