How to make tasty Ghee Roast Chicken at home? Here’s the recipe

1. Mix chicken, curd, turmeric powder, salt, lemon juice and 1 tablespoon red chili powder in a bowl. Apply a thick layer of the mixture to the chicken pieces. Set it aside for a minimum of 30 to 45 minutes.
2. Add the peppercorns, cloves, coriander seeds, cumin seeds and fenugreek seeds to a pan of hot ghee. Roast them for 3–4 minutes on low heat. To form a paste, now crush the roasted red chillies and spices, garlic flakes, tamarind paste and red chili powder until they are all dry.
3. Add two and a half tablespoons of ghee to a kadhai. To the kadhai, add the marinated chicken pieces and any remaining marinade. Cook the chicken until it is 3/4. Now, place the chicken pieces aside and fill the same kadhai with the remaining ghee. On low heat, sauté the ground paste for 7–8 minutes. Check whether the ghee has begun to separate.
4. Add the jaggery and chicken pieces to the kadhai now. Add two tablespoons of water and salt to taste. Just remember that this is a recipe for roasted chicken, so don’t add too much water. Cook on low heat for ten minutes with the lid closed. After cooking for two minutes, take off the cover. Check whether the chicken has cooked all the way through. When finished, turn off the flame.
5. You may now offer your roast chicken with ghee.
