1. To make the masala dosa batter, wash and soak the rice (with fenugreek) and urad dal in separate containers for 6-8 hours. After the rice and urad dal have been well soaked, grind them separately in a blender with the soaking water until the mixture has a smooth consistency. In a larger container, mix the two ingredients and add salt. Mix thoroughly and leave to ferment for the entire night.
2. To make the dosa filling, heat up two tablespoons of oil in a pan with a thick bottom and allow the mustard seeds to sizzle. After that, add the chopped onions, green chilies and curry leaves and sauté them until the onions become pink. Next, thoroughly mix the turmeric powder and a little amount of salt. Now take the sliced potatoes and mix them with the onions that have been sauteed. After adding a little water, boil the potatoes for around 4 minutes.
